Papa’s Best Batch is a smokehouse and sammich shop serving lunch and early dinner from an iconic 1972 Airstream trailer at The Greig Farm. Papa is Jody Apap, long-time Red Hook resident and self-taught smoker and cook.
Jody started smoking pistachios and almonds in his back yard for commercial distribution 7 years ago and developed today’s menu from years by building and refining the notion of “smoking small.” He developed a few key flavor profiles and his smoking process using applewood and charcoal on the Greig Farm. Today Papa’s gourmet smoked pistachios, almonds, and (new) beef jerky are available in more than 175 stores throughout the Hudson Valley and New England.
Casual, rustic, and gourmet - making Papa’s a popular destination for both locals and visitors to the Hudson Valley.
